Oxygen should not get into the wine while it is stored or the oxidation can ruin the wine's flavor. Thus, the cork needs to be firmly secured to ensure that the wine is kept in the bottle.

In order to avoid having the cork dry out, wine needs to be stored on its side. That is why if you notice, all wine cellars have racks that only allow the wine to be stored horizontally. This makes sure that the wine keeps on touching the cork of the bottle, keeping the cork moist, allowing it to seal perfectly.

Wine cellars need to be cool, maintaining constant temperature. Drastic changes in temperature are the main enemy of cellared wines. Fluctuating temperature ruin the cork which will again lead to a ruined bottle of wine.

It is a good thing to note though that not all wines need to be stored for decades. A number of wines are ready for tasting by 5 years. Here is a quick guide:
- Vintage champagne, store for 5 to 8 years
- Vintage port, store for 5 to 20 years

- Chardonnay, store for 2 to 5 years

When wine is stored properly, one is assured that come tasting time, the wine will be able to fulfill its duty of delighting your senses. The answer is by serving them in higher than room temperature.
