First you need to learn the basics of preparation. Second, you need to find a good grocer or market with quality goods at affordable prices. Tip, the word "gourmet" written on a tin can does not make the foodstuff gourmet. You are better of putting emphasis on finding fresh produce, meats, ingredients as well as spices of the utmost quality rather than relying on canned and processed goods. Third, you will need a reliable set of utensils, pots and pans and of course a cooker, preferably with an oven but if you do not have an oven then that is fine for now.

For now avoid spending a small fortune on new and expensive utensils, pots and pans and a new stove. Limit yourself to cooking gourmet food you can make with what you have got and only buy new stuff when you actually need it.

Here are a few pasta basics that you need to know. First hand made, fresh pasta is just as good as dried pasta. Do not believe the snobs who say otherwise. Good pasta is actually more a question of cooking and ingredients. Brand name and price is also not a very good indicator because some cheaper brands are better than the more expensive ones. Finding good pasta is actually a hit or miss thing. Buy a brand and try it, if you have a relative, friend or a teacher who recommends a good brand try it as well. In the end and after a few tries stick to the brand you prefer.

Second, when cooking pasta there is no need to put in oil, the best thing to do is cook the pasta only when the water is boiling and make sure there is more than enough water for the pasta to swim around even after it has cooked. A good rule of thumb is to follow the instructions in the packaging but still test the pasta before removing it. The instructions are only there as a guide and the cooking time will still vary depending on the amount of water used as well as the actual temperature of the water. Tip, always have ample boiling water when cooking pasta since the temperature of the water drops the more pasta is cooked hence the longer the cooking time.
