There are some nights that a craving for good traditional Italian food is requested by the family. Nothing tops home-made Italian food, particularly when the celebrated pasta is served.
Italian recipes are known for their ingredients that contain sauces, vegetables, meat, fish or pasta. The sweet, spicy, sour, and creamy blending of Italian food would certainly satisfy the hunger of any lover of Italian food.
Presented below are two Italian dishes that are great options to the sometimes boring pizza dinner:
Eggplant Tortiglioni
A great mix of eggplant and pasta, this healthy Italian recipe is perfect every time the family wishes pasta for dinner.
The food's health benefits come mainly from the antioxidant bearing eggplant, the vitamin C carrying tomato, and the B vitamin containing cholesterol-free pasta.
It is best to peel off the eggplant's skin and cut the fleshy part of the vegetable into small pieces to remove its bitter taste.

The ingredients needed to make the dish include:
1/2 onion, peeled and finely chopped
1 eggplant, peeled, sliced and each slice quartered
pepper
salt
2 tablespoons olive oil
1 twenty-seven ounces can, strained tomatoes
parmesan cheese
vegetable oil for frying
1 pound tortiglioni or any tube-shaped pasta

The following are steps in cooking this dish:
1. Sprinkle the cut eggplant with salt while on a cutting board. Apply a heavy weight on the vegetable for about 20 minutes. Wash with clean water and pat dry.

The Sauce
1. Fry garlic in olive oil using a saucepan. Let garlic fry to its brown color and remove the colored garlic bits from the pan.
2. The onions are sautéed until tender in the same pan.
3. Then add tomatoes in the pan and simmer the mixture under low heat for 20 minutes. Add salt and pepper to taste.

The Eggplant
1. Fry the pieces of eggplant over hot olive oil in a large skillet. Fry the vegetable in batches for approximately 2 minutes. Transfer the fried eggplant on a plate topped with a paper towel to drain the oil.
2. After draining, add the eggplant to a heated saucepan that contains the tomato sauce. Simmer while waiting for the pasta to cook.
The Pasta
1. Boil pasta according to the instructions printed on the package.
2. Mix the tomato eggplant sauce with the pasta and top it with Parmesan cheese to taste.

Penne alla Vodka
Another pasta dish that could provide health benefits similar to Eggplant Tortiglioni minus the eggplant is the Penne alla Vodka.

The pasta's ingredients include:
2 tablespoons olive oil
1 pound penne pasta
2 finely chopped garlic cloves
1/2 medium chopped in small dice yellow onion
1/4 cup vodka
1 twenty-eight ounce can of San Marzano tomatoes
3 tablespoons unsalted butter
1/2 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese

How to cook the pasta includes:
1. Boil the pasta to al dente according to the instructions printed on the package. Remove water by draining the pasta.
2. In a large skillet over medium heat, prepare the sauce by adding olive oil, onions, and garlic and sauté for 3 minutes.
3. Add vodka, tomatoes with salt and pepper to taste. Simmer until the alcohol burns off, and then add heavy cream and butter.
4. Add the pasta, tossing it with the sauce over high heat.
5. Top with parsley and Parmesan cheese before serving immediately.
