Healthy Recipes Roasted Baby Beets with Salad and Feta Cheese

If you want it simple with common ingredients that are easy to find, you can always count on this recipe. This is a perfect lunch or dinner that you can introduce to the kids and kids at heart.
Serves: 4
Prep time: 1 hour
Cook time: 15 minutes

Ingredients:
1 head butter lettuce
10 small baby beets, cleaned, leave at least an inch of the stem
3 tablespoons olive oil
feta cheese, crumbled
1 tablespoon red wine vinegar
Pinch of salt

Instructions:
1. Preheat the oven to 350 degrees F.
2. Wrap baby beets using an aluminum foil.
3. Place inside the oven and roast for 1 hour.
4. Remove from foil. Let cool before peeling the skin. You can either slice or leave it whole.
5. Meanwhile, put together vinegar and salt. Mix until the salt dissolves. Pour olive oil, and then whisk until all ingredients come together.
6. Put beets and butter lettuce to the bowl. Pour dressing all over. Toss well to coat.
7. Sprinkle with feta cheese on top. Serve.

Butter Lettuce with Shallots Vinaigrette
Salad is simply love! Just toss some butter lettuce in your salad plate, drizzle in vinaigrette, and you're good to go.
Today, salads have many variations as well as vinaigrettes. This dish will teach you another easy way to make salad that can be done in just 5 minutes!
PRO TIP: Salt will melt with vinegar. Therefore, it is best to do it first rather than with olive oil. Also, drizzle in vinaigrette if you're all set to eat the salad. Having the vinaigrette sit for too long all over your salad would only wilt the vegetables

Ingredients:
1 head butter lettuce, washed, torn into pieces
1 shallot, diced
1/2 teaspoon salt
1 tablespoon red wine vinegar
1/2 teaspoon Dijon mustard
freshly ground black pepper
3 tablespoons olive oil

Instructions:
1. Combine salt and vinegar in a bowl. Mix well until the salt dissolves. Stir in shallots mustard, and pepper. Mix well.
2. Drizzle in olive oil, gradually and steadily. Whisk until smooth.
3. Add butter lettuce to the vinaigrette. Toss well to coat. Serve immediately.

Roasted Broccolis with Thai Chili Soy
Roasted Broccolis is easy to prepare, you can just let the oven do all the work. This dish is a perfect addition to other dishes. Give it a twist, this time with the Thai Chili – not too salty and spicy.
Serves: 4
Prep time: 5 minutes
Cook time: 15 minutes

Ingredients:
1 pound broccolis, cut into bite-sized florets
2 Tablespoons Thai Chili Soy Sauce
2 tablespoons olive oil
Pinch of salt
Pinch of pepper
2 garlic cloves, finely chopped
Instructions:
1. Preheat the oven to 375 degrees F.
2. Place broccolis florets in a large bowl.
3. Add in garlic, soy sauce, and olive oil. Season with salt and pepper. Stir well.
4. Layer broccolis in an aluminum lined cookie sheet. Place inside the oven and bake for 15 minutes.
5. Take out from the oven and transfer to a platter. Serve.
